Pineapple Ham

4-6 ham slices (1/4-1" thick)
1 (20 oz.) can pineapple, crushed
2 tbsp. cornstarch
2 tbsp. brown sugar
1/2 tsp. cinnamon
1 to 1-1/2 c. finely grated carrot

Place sliced ham in oven at 300 degrees. Meanwhile, drain pineapple juice into saucepan, place crushed pineapple in prep bowl. Mix together cornstarch, sugar and cinnamon. Whisk cornstarch mixture  into pineapple juice bring to a simmer; stirring constantly, until thickened. Add carrots and pineapple. Remove ham from oven and spread the mixture over ham slices and bake 20 more minutes.
