1 T coconut oil*
1/2 c. honey
1 T. vanilla extract
1 t. cinnamon
1/2 t. pumpkin pie spice
4 c. oats
1 t. pure maple syrup
#1. Preheat Oven to 325˚. Grease 2 baking trays w/coconut oil & set aside.
#2. Mix together PB & honey. Microwave for 40 seconds.
#3. In a large bowl, mix together PB & honey combo, along with the vanilla, cinnamon, and pumpkin pie spice.
#4. Add in the oats and stir until all the oats are covered. (Add in the maple syrup to get the oats to stick to the mixture).
#5. Spread out the granola in single layers onto the 2 baking trays. Bake for 10-15 mins, flipping half way.
“Gifting” the granola in Mason Jars
#1. Once the granola has fully cooled, throw in any “holiday add-ins” you would like, such as ½ c. raisins, Christmas m&ms, unsweetened coconut flakes, & dark choc. covered peanuts.
#2. Scoop granola into mason jar and add a festive holiday tag. (Don’t forget to add a list of the ingredients to avoid any allergy issues).
