Creatively Lu's Roasted Maple Coconut Almonds

  • 2 c. of  raw almonds
  • 2 Tbsp. pure maple syrup
  • 1 Tbsp. of coconut flakes
  • (unsweetened)
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. sea salt
  1. Preheat oven to 375˚.
  2.  In a medium mixing bowl, combine the ingredients. Toss until almonds are well coated.
  3.  Spread almonds out in a single layer on a baking sheet lined with parchment paper.
  4.  Bake for 10 minutes, stirring halfway through. 
  5.  Cool for at least an hour before storing in an airtight container.
