Creatively Lu's Mini Pumpkin Cake Loaves w/Maple Sugar Glaze


½c. unsalted  butter (melted)
½c. sugar
2t. vanilla
2/3c. pumpkin puree 
2/3c. whole wheat pastry flour
¼c. all-purpose flour
2 t. baking powder
¼t. salt
½teaspoon pumpkin spice
(can sub for nutmeg)
½teaspoon cinnamon-
*Maple Sugar GLAZE:

c. powdered sugar
½T. pure maple syrup

splash of water
*For Mini Pumpkin Cake Loaves
1. Preheat oven to 350. 2. In a large bowl, mix together the butter and sugar until light and whipped. 3. Add egg and stir until well combined. Mix in the vanilla and pumpkin 4. In a small bowl, mix together the dry ingredients and add to the pumpkin batter. Mix only lightly. 6. Spray 2 mini loaf pans with non-stick spray and pour batter into them. 7. Bake for 30-35 minutes or until inserted toothpick comes out clean.

*For Mini Pumpkin Cake Muffins
Follow the directions accordingly. Just pour batter into muffin pans & bake for only 25 minutes at 350. 
*For Maple Sugar Glaze Mix the syrup, water and sugar together to form a glaze. Pour over bread or muffins once cooled.
