Dark Chocolate Chunk Skillet Cookie

 
 
1/2 cup Butter
 
1/3 cup Sugar
 
1/3 cup Brown Sugar
 
2 teaspoons Vanilla
 
1 egg
 
1 1/2 cups Flour
 
1/2 teaspoon Baking Soda
 
1/4 teaspoon Salt
 
1 cup chopped Dark Chocolate
 
 
Melt butter in an 8-inch cast iron skillet. Add sugars and vanilla, mix well and remove from heat. Let cool, then add the egg, mixing well. Carefully mix in the dry ingredients and thoroughly combine. Stir in dark chocolate and bake at 350* for 15-25 minutes. The cookie should be golden on the outside but still soft in the center.  Best served with vanilla ice cream1
 
Variation: substitute white chocolate chunks and add macadamia nuts!
