No-Bake Cheesecake Filling
8 ounces of cream cheese, softened
1/3 cup sugar
1 tsp vanilla
Whipped Cream (see recipe below)
Mix cream cheese, sugar, and vanilla until smooth. Fold in whipped cream gently. Spread into crust and chill for 1 hour before using. Or, be like me and dip chunks of crust directly into spoonfuls of filling.

1 cup of whipping cream, cold
2 Tblsp granulated sugar
At least 15 minutes before making your whipped cream, chill the bowl you’re making it in and the beater(s) from your mixer.
Add the sugar and cream to cold bowl and whip until it becomes fluffy whipped cream. Then try not to eat all of it before using in recipe.
