Cinnamon Sugar Pie Crust Cookies

Kids love these! (Adults too.) Also, they are great if you find yourself with extra pie crust dough.


1 All Butter Pie Crust (recipe below), rolled out

1-2 tablespoons Butter, softened

3 tablespoons sugar

3 teaspoons cinnamon


Roll out your pie crust and spread with butter. Mix cinnamon and sugar in a small bowl. Sprinkle as desired on crust. Reserve any leftover for next time!

Roll the crust, starting at one end, so that you end with a tightly rolled log. Cover well with plastic wrap and refrigerate at least 1 hour.

Slice your log and place on cookie sheet. Slice the cookies about ½-1” wide.

Bake at 350° for 10-15 minutes, depending on width of cookie. Keep a close eye after about 8 minutes, to make sure they don’t burn.

1 ¼ cups all-purpose flour

¼ teaspoon salt

½ cup butter, diced and chilled

¼ cup of ice water (4 tablespoons)

1. Combine flour and salt in food processor. Add butter and process until it resembles coarse crumbs. Stir in water, one tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate 4 hours or overnight. (Um, who has that kind of patience? Mine refrigerated for about 1/2 hour, but you probably should do it a bit longer if you can stand it!)

2.  Roll out dough to desired size and make your cinnamon sugar pie crust cookies.
