Pink Lemonade Cupcakes

1 cup flour 
1/2 tsp baking powder 
1/4 tsp baking soda 
pinch of salt 
1/2 cup sugar 
1/4 cup vegetable oil 
2 egg whites 
1/3 cup frozen pink lemonade concentrate, thawed 
1/4 cup buttermilk 
2-3 drops red food coloring

1. Preheat oven to 350F. Line muffin pan with cupcake liners. 
2. In a small bow, whisk together flour, baking powder, baking soda and salt. 
3. In a separate bowl, mix together sugar, oil, egg whites and lemonade concentrate. Alternately mix in flour mixture and buttermilk, making three additions of the flour mixture and two of buttermilk. Add enough food coloring to turn the batter your desired shade of pink. 
3. Scoop into cupcake liners and bake for 20-25 minutes, or until an inserted toothpick comes out clean.
