Oatmeal Raisin Cookies

2 1/4 cups flour 
1 tsp baking soda 
1/4 tsp salt 
1 cup quick oats 
1 cup dark brown sugar, packed 
1/2 cup white sugar 
1 cup salted butter, softened 
2 tbsp honey 
2 tsp vanilla 
2 large eggs 
1 1/2 cups raisins 
1/2 cup chopped walnuts, optional 

1. Preheat oven to 300F 
2. In a medium bowl, whisk flour, baking soda, salt and oats. 
3. In a large bowl, blend sugars. Add butter and mix to form a grainy paste. Add honey, vanilla and eggs. Mix until fully combined.
4. Add flour mixture, and raisins. Do not over mix. 
5. Drop by rounded teaspoons onto ungreased cookie sheets. Bake for 18-22 minutes or until cookies are light golden brown.
