We've been making lots of juice lately with the Champion Juicer. After the delicious blood of the vegetables is milked from them you end up with a bowl of fruit and veggie pulp. I hate just wasting it all so have been searching for uses. I found one carrot cake recipe for the carrot pulp but this evening I had a better idea. Cookies for Bean! Today's pulp was made from: carrot, lacinto kale, kale, water cress, pear, apple, parsley, broccoli, spinach, dandelion greens, ginger, and beets. I added peanut butter, nutritional yeast, flax seed meal, sprouted seven grain cereal, and gluten free flour to make them more cohesive then rolled the dough out and cut it into shape. Bake for uncertain amount of time at uncertain temperature -- until crunchy. It was awesome, like playing science in the kitchen with the knowledge that it doesn't actually have to be palatable because Bean loves everything.
