Quick Pickle

Cranberry Pear Balsamic Vinegar©
English Cucumber - sliced thinly (if using a regular cucumber, be sure and peel it first)
Small Onion - slice thinly
Salt (Maldon Sea Salt©)
Pepper (Tellicherry Peppercorns©)

Place cucumber and onion in a covered dish.  Season with salt and pepper.  Pour in Cranberry Pear Balsamic Vinegar until the cucumbers and onions are covered.  Place in the refrigerator for at least 30 minutes or overnight.  You can also put everything in a plastic bag.  Be sure to turn or stir everything occasionally to make sure it all gets coated.  Enjoy!
