Cherry Rolls

INGREDIENTS

DOUGH

60g butter

180 ml milk

8g yeast

100g honey

1 large egg

A pinch of salt

120g whole grain flour

180g flour

2 teaspoons kakao pouder

50g chocolate chips

FILLING

250g quark

1 ½ tablespoons vanilla

1 tablespoon lemon juice

1 egg

170g cored cherries

DIRECTIONS

Put the butter out of the freezer, so that ist not cold when you ought to use it. Then heat up the milk, till it is as warm as your lips. Add the yeast and let stand for 5 minutes.

Mix butter, honey and the egg with the milk and the yeast. Don’t worry, it doesn’t matter if the butter doesn’t dissolve entirely.

Add the whole grain flour and the normal flour while currently stirring. Mix in the kakao pouder and let the dough rest for about an hour at a warm place.

Meanwhile you can make the filling. Mix quark with vanilla, lemon juice and the egg. Cut the cherries in quarters and mix them in.

When an hour has gone by, gently fold in the chocolate chips. Cover your workplace surface with flour and flatten the dough. Then preheat your oven to 160°C (320°F).

 

Dab your muffin forms with oil. Then spilt off 30cm (12 inches) long and about 6 cm (3 inches) broad  stripes from your dough and coat them with the filling.  Roll up the dough and put in the muffin form. Bake the rolls for 10 -15 minutes.
