I will heat this up with rice for a hearty lunch tomorrow. Now to think of my next dish.... Probably won't be tofu. And for anyone saying oh gosh, all vegans eat is tofu.... NOT. Also, anyone who is like, oh, this is not a good hearty Kiwi meal—how many times do you eat Chinese takeaways eh? When I was not vegan, I ate tons of Chinese food. So no stereotyping please! Let's keep it honest. Anyway, autumn is basically here and winter will be next, so I will be making lots of soups and stews and stuff - Western type foods. Also, I am in love with pies and pastries and all those kinds of things but I have to learn how to make them though, I am still a very beginner cook, and bready type stuff is still a real challenge for me. I love burgers too, but I have not yet attempted my own black bean burger or lentil burger yet. Plus I love mexican food—vegan enchiladas, burritos etc. There are just so many recipes to learn. So much delicious food. I love it
