Oatmeal Pie


1 pie crust (for a single layer crust)

1/4 cup melted butter, melted and cooled

1/2 cup brown sugar

1 cup light corn syrup

1 cup oatmeal

3 eggs, beaten

1/2 teaspoon cinnamon

a pinch of salt

1/2 cup water

Preheat oven to 350˚

Place the pie crust in to the pie plate. Prick it gently with a fork a few times on the bottom to prevent blisters on the bottom of the pie and pinch crust edges as desired. 

In a mixing bowl, combine all of the rest of the ingredients. Pour into the pie crust. Bake for 30 minutes.

Serve with whipped cream or ice cream. Enjoy!
