3 cups all-purpose flour
2/3 cup sugar
1 Tablespoon balking powder
1 1/2 teaspoon salt
1 teaspoon baking soda
1 3/4 cups buttermilk
4 Tablespoons butter, melted and cooled just a bit
1 cup raisins (optional)
2 additional tablespoons melted butter
Preheat Oven to 350˚.
Combine the DRY ingredients in a large bowl.
In a separate bowl, combine the WET ingredients and stir well.
Add the WET ingredients to the DRY ingredients and mix JUST until combined.
Add raisins and stir to combine.
Pour batter into a greased or sprayed 9 inch circular cake pan pour two tablespoons of melted butter over the top of the batter and brush over the top. Bake for about one hour until the top is golden and is firm to the touch. Cool ten minutes and then slice to serve.
