Ginger Ahi Tuna Tartare

Serves 6 to 8 as an appetizer
Total Prep Time: 45 minutes
Active Work Time: 20 minutes

1-pound sushi grade Ahi tuna, cut into 1/4-inch (or smaller) dice
1/2 cup finely chopped white onion (about 1/8-inch dice)
1/4 cup finely chopped, fresh, peeled ginger (about 1/8-inch dice)
1/4 cup finely chopped chives
Sea salt to taste

Combine all of the ingredients and keep chilled until you're ready to serve.

A lovely way to serve this is simply on a lettuce leaf!  Divine!

Or this can be served on chips (here I've used wonton wrappers) for an hors d'ouevres.  I used a 1-inch cookie scoop to add the tartare to the wontons.

45 minutes ahead: Cut all of the ingredients and combine them.
This should definitely be made as close to serving time as possible.  Once it's mixed, chill it in the refrigerator for about 20 minutes before serving.
