Cooking Corn on the Cob - Street Festival Style
Ears of maize by the crate ready to be roasted into one of the apparent staples of Toronto's street festivals. There is no conveyor belt, however the whole process from raw ears in the crates, to roaster, to cool box, to the stall, seems to have been laid out for smoothe processing. The "shop manager" stationed at the stall seems to be gauging the production velocity.

I use lemon, shallots, white pepper and herbs on the chicken. I put white wine or beer in the bowl of the roaster and it evaporates and steams the chicken.
