thrown together couscous, farro, lentils, mushrooms, onion, fakey snausage, roasted eggplant on the side. most random lunch ever due to the fact that I was starving after cardio & yoga. Needed some serious fuel. I had made the couscous, farro and lentils yesterday and had leftovers in the fridge. Those were simply boiled separately in veggie broth. I spooned some of each into the bowl cold and nuked it for a minute (oh convenient microwave how you curse me so). I sauteed some yellow onion and sliced criminis in some olive oil until soft. I tossed those on top of the grains/lentils and threw a Morningstar fake sausage into the still hot sautee pan until cooked. I sliced up 3 thick slabs of Eggplant and 4 cloves of garlic. I turned on the broiler, basted some foil with olive oil and put the eggplant and garlic on top. I topped off with some extra olive oil, salt and pepper and roasted for 15 minutes (because I like things extra crispy and burnt). Meal took about 15 minutes. Was devoured in less then 5.

Prep time: ~10 minutes Cooking time: ~ 30 minutes Rating: Good (4) *Cooking Light Magazine Complete Cookbook Recipe* -- pg. 400 Ingredients: - 1/2" thick pork chops - salt & pepper (to taste) - peeled boiling onions (10-15) - 3/4 cup Sherry cooking wine - 1tbsp brown sugar - 2 tbsp balsamic vinegar/vinaigrette - 1 tsp cornstarch - 1 vanilla bean or 1 tsp vanilla extract - Archer Farms steam-in-bag broccoli Recipe: - salt/pepper the chops to taste - Cook pork chops and onions with a little bit of oil over med-high heat; 4 minutes on each side - Add vanilla and wine to pan, reduce to med-low heat, simmer for 20 minutes - Remove pork/onions and set aside (keep warm) - Combine brown sugar, balsamic, and cornstarch together, mix, and add to pan - bring to boil for 1 minute (do not let it thicken too much; pictured), serve over pork chops and onions. Make broccoli (microwave) as described on packaging.
