Spread the meat evenly with 1tsp kosher salt, 1tsp freshly ground black pepper, and 2 Tbls. fresh chopped thyme.
Use any thick, or loose pieces of meat to fill in thin spots and fold the meat to be an even-thicknessed rectangle.
