Sriracha & Chicken White Pizza
Sriracha & Chicken White Pizza
What is this you see before you? Sriracha Chicken White Pizza. How it came about? *Note: Pretty much all ingredients of tonights meal came from Trader Joe’s* Sheri and I had plans tonight that we ended up changing last moment. So I figured if we were staying home tonight. I was going to make a nice dinner. I’ve played this game before, so I did it again. I asked Sheri to pick three things. Be it a spice, a meat, a veggie, whatever. So she picked: Garlic, Chicken, Potato. That’s where I began my search. I wanted something new. I found a few recipes that sounded so good. However I was having an issue incorporating the potato into the mix. So I had to keep looking. Then I thought about things we had in our cabinets and things that Sheri’s taking a liking to lately and that’s when Sriracha entered my mind. So I decided to add that to the search and after a few minutes of searching, I found something that kind of surprised me. Goosetown Tavern. For those friends of mine who live in Denver, this name should be instantly recognized. Sheri and I have been to this place once while living in Denver. We went there to play Geeks Who Drink one week. We were the only two in our team that night, the smallest number team “Satan Gave Me A Taco” had ever, but we placed, which was pretty awesome! Anyway... I read a review (and then went to their website to confirm) that mentioned “Spicy Sriracha Pizza”. And I knew at that point I had to make it. Search over. Well I found a super quick and simple recipe for making potato rounds. I had two yellow potatoes, so all I needed to do was slice those thinly and add fry them, add some salt and pepper and Voila! The pizza, as described on their website was: “A white pizza topped with spicy sriracha chili sauce, roasted garlic, mozzarella, fresh mozzarella, red onion, tomato fresh basil and shredded parmesan cheese.” After doing some grocery shopping I had to make a few minor changes. Instead of list them, I’ll write my own recipe. I first peeled the bulb of garlic and smashed each clove. About 8 or 9 of them. Cooked them in some Olive Oil. When they had a nice crispy looking texture, I placed them on some paper towels to drain. I then add more oil to the oil they had been cooking and while that heated back up, I rubbed Sriracha all over three chicken thighs before adding them to the hot oil. I cooked them to the point where all the pink we gone and then removed them from the pan. I then rolled out the Garlic and Herb Pizza Dough and then it was time to assemble everything. I spread Sriracha over the rolled out dough. Then added the grated Low Moisture Skim Milk Mozzarella over that. Followed by the Garlic that I pulled apart by hand. Next was the sliced High Lycopene Tomatoes on the Vine, then the grated Parmesan Cheese, the Chicken and finally some dried Basil (since Trader Joe’s doesn’t sell fresh Basil). Once assembled, I popped it into a preheated 450 degree oven for 11 minutes and the results were a very tasty pizza with just the right amount of heat. I... We were both very satisfied with the way it came out and I do plan to make it again in the future.

Around 2:30, Adam picked me up and we went to his house. We were still doing some last minute organizing and stuff for our big, giant, summer park day! Eventually, Loly and Noelle came too. When they arrived, I could hear Loly ask Adam, "Is she upstairs?" followed by Loly, charging up and jumping into my arms to hug me. :) We all headed to Walmart after that, and Leslie met up with us there, followed by Fredis and Alex. We stocked up on all the essentials and headed to the park, where Virginia had beat us. Freddy showed up later, making good on his promise to bring watermelon. <3 And then after that, Michelle and Nadia came too. Michelle brought her dog and he was precious!!!! Virginia and Alex kinda took over the cooking portion stuff, which I was cool with because I don't know SHIT about grilling. Adam may or may not have helped, not sure. He really just gets in the way of stuff. ;) Food was good. :) And Freddy's watermelon was amazing! And randomly, Alex helped me practice batting before we organized a game. As the sun started setting, we headed down to the field and played Boys VS Girls. :) Missy eventually joined us, and so did Michael, Jimmy and Sunny. :) We played for about 2 hours and it was awesome! I forgot how much I loved the sport. I hadn't picked up a bat in YEARS and I wasn't as rusty as I thought I'd be. :) As it started getting dark, AmpHead joined us for a bit and then we packed up. Freddy, Missy, Leslie, Nadia, Sunny and I all headed to Adam's house for pizza and video games. Adam kept falling asleep, but I got to know his friends pretty well. :) They were all really sweet and I liked them. :) Later on, Adam even told me he was happy to know that I could talk to his friends and joke and get along really well with them. :) I like it too. It's definitely a first. :)
