I had this ground beef to use up and I knew Rachael Ray had a bunch of burger recipes so I went searching the recipe archives at the Rachael Ray show. Hot wing turkey burgers? Pomegranate feta burgers? Salmon cobb burgers? This girl is CRAZY... in a good, good way. The recipe I ended up trying was called something like Knife and Fork Burger with Stewed Vegetables. I changed it around a little and ended up with basically a beef stew made with burger patties instead of stew beef. Yum. Burger Stew (for about two people) 1 lb ground beef 1/4 of a medium onion, chopped fine a dash of worchestershire salt and pepper a little fat for the pan 1/2 an onion, chopped 1 carrot chopped 6 or 8 brown or white mushrooms, sliced salt, pepper, dry thyme or other herbs 1 1/2 tablespoons or so of butter, beef tallow or coconut oil 1 1/2 tablespoons flour 1 1/2 cups beef or chicken broth, water or a mix 1/3 cup frozen peas 1 tsp-1 tbs chopped fresh herbs like thyme, tarragon and oregano A few dashes of worchestershire sauce, soy sauce, red wine vinegar, etc First form your patties with the ground beef, finely minced onion, salt, pepper and worchestershire sauce. I formed mine into about 4 mini patties rather than 2 or 3 normal sized patties. This facilitated lunch sized leftover portions. Have everything else ready and fry the burgers in a wide stainless steel or cast iron skillet. When they are cooked to your liking, or a little less, remove them to a plate and cover with foil. In the pan with the drippings add the rest of the fat and the vegetables, salt, pepper and dried herbs. Satuee until the onions are transluscent and the mushrooms are starting to brown. Add just a spoonful or so of liquid if things start to brown and stick. Sprinkle the flour over top of the cooked vegetables and fat and stir and cook for a few minutes. Slowly pour the liquid in, bring to a boil and allow to simmer, stirring occasionally, until thickened. Adjust the flavor with worchestershire or vinegar, more salt and pepper, and the fresh herbs. Add the peas and nestle the patties back in the gravy and allow everything to heat up. Rachael added potatoes to the gravy and served this over a toasted english muffin. I chose to boil potatoes on the side and serve the stew over those instead. It would also be good over egg noodles. Thanks, Rach!
