Deviled Eggs Ranchero Description: A Mexican twist on an old favorite. Ingredients: 12 eggs 1/2 cup mayonnaise 8 oz. Rotel tomatoes (just shy of a whole can), drained 1/4 cup pepper-jack cheese, shredded 2 tablespoons cilantro, finely chopped salt ground black pepper Tabasco or other hot sauce (to taste) 1/2 teaspoon lime juice guacamole to garnish fresh chives snipped, to garnish **Can substitute your favorite salsa (drained!) for the Rotel tomatoes. Directions: Place the eggs in enough cold water to cover in a large saucepan. Bring to a boil over medium-high heat. As soon as the eggs begin to boil, time them for 10 minutes. After 10 minutes, drain off the hot water and run the eggs under cold water until cool. Tap the eggs gently in several places to crack shells, then peel. Slice the eggs in half lengthwise and carefully remove the yolks from the whites. Place the yolks in a bowl. To the yolks add the mayo, Rotel tomatoes, cheese, cilantro, salt, and pepper, 1/2 teaspoon lime juice, and Tabasco; using a fork, mix until well blended. Refill the egg white halves with the yolk mixture, using a spoon or small spatula. Garnish each with a dollop of guacamole and a sprinkling of chives. Enjoy!! *I cut the top off a ziploc bag at an angle, spooned a couple of tablespoons of guacamole inside the bag, then cut off the distal tip with some scissors and used this as a makeshift "icing bag" to squirt little drops of guacamole atop each egg as garnish. RECIPE: Ingredients 6 eggs 3 tablespoons soy sauce 1 teaspoon salt 1 tablespoon black tea leaves or 1 tea bag 4 pieces star anise 1 small stick cinnamon or cassia bark 1 teaspoon cracked peppercorns (optional) 2 strips dried mandarin peel (optional) Method Place unshelled eggs in saucepan of cold water – water level should be at least 4 cm (1-1/2") higher than eggs. Bring to a boil, then simmer for 2 minutes. Remove the eggs. With a knife, tap each egg to slightly crack the shells in two or three places. Return to saucepan. Add other ingredients and stir. Cover and simmer for 2 hours, adding water as necessary. Drain, serve hot or cold. Notes Cook longer for a stronger flavour and a deeper colour. Tea eggs are also known as Chinese marbled eggs for the unique marbling effect on the surface of the egg. Sauce can be frozen and reused.
