Cuban roast pork - slow cooked and served over yellow saffron rice Cuban Port Roast Recipe By : Jay Kruemcke Serving Size : 6 Preparation Time :12:00 Categories : Casseroles / One Dish Meals Pork Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 pounds Pork Roast 1 teaspoon fresh ground black pepper 1 teaspoon cumin 2 teaspoons salt 1 teaspoon oregano 1/3 cup orange juice 1/3 cup sherry 3 tablespoons lime juice 3 tablespoons lemon juice 1/4 each sweet onion -- thinly sliced 2 tablespoons olive oil The night before, mix all ingredients except pork and onions in a large non-reactive container (with lid) or a plastic bag. This is the marinade Put the pork into marinade container, coat well and marinade overnight. Turn twice if possible. The next morning - put the onions into the slow cooker/crock pot. then pour pork and marinade on top. Cover and turn on slow cooker. Cook for 6 hours until meat is falling apart tender. To add a brown crust to the roast. Transfer the contents of the slow cooker to a roasting pan and roast in a 325 degree oven for one hour. Serve over a bed of yellow rice (I use two single packages of Virgo Yellow Saffron Rice) Garnish with chopped parsley

Very nice.. here`s the recipe: Roast a pork shoulder for six hours, so for a 6pm dinner firstly preheat the oven at 11.50 a.m. at Gas mark 3, or 160c. Next place the joint into the oven with a dry rubbing of herbs of your choice, sea salt and peppercorns, but add no fat as the meat`s crackling will keep it moist. After three and a half hours i.e. 3.30pm add raw potatoes cut into quarters. After a further hour and a half i.e. 5pm add raw carrot cut chunky style with whole small shallots. At 6pm take out of oven and place joint and vegetables onto a big plate [with kitchen roll to soak up any fat] and leave to stand in a warm place for ten minutes. Meanwhile put on some petit pois to cook and make the gravy by skimming off most of the fat residue [we have to watch our waistlines] and add a tablespoon of flour into one corner of the roasting dish. Melt into the pan over a low heat, then add your choice of gravy mixture liquid to the pan and stir until thick. Now put the roasted pork onto a separate dish and with two forks `flake` the meat off. Do not try to carve it, waste of time, just put it into a warm bowl before dishing up and pouring on the gravy. Don`t forget the peas and a tablespoon full of apple sauce.
