Perfect Party Cookies
1/2 cup softened butter
1/2 cup shortening
1/2 cup powdered sugar
1 teaspoon vanilla or almond extract (I used Princess Cake & Cookie Emulsion which is a super yummy mix of both vanilla and almond with a hint of citrus)
2 1/3 cup AP flour
Coarse sanding sugar for decorating
2 cups sifted powdered sugar
4 T. softened butter
1 t. vanilla extract (optional)
Preheat to 375
Cream butter, shortening and powdered sugar with stand mixer until fluffy. Beat in extract.
On low speed add flour and mix until thoroughly combined/
On parchment lined baking sheet roll dough into 1" balls.
Spray bottom of sturdy glass with baking spray or smear with shortening.
Dip glass into sprinkles and press down on each ball flattening it. Re-dip in sprinkles after each press.
Bake for approx 8 minutes until bottoms just start to get golden. Do not over-bake!!.
Cool on wire racks.
Prepare filling by combining all filling ingredients and mixing until smooth.
When cookies are cooled fill with approx 1 teaspoon frosting and make sandwich.Makes approx 36 filled cookies
