Moldy Mice Cookies

These are soooo easy and everyone loves them. This is mostly what I carry to office parties. ENJOY!!!

Editor's Note: Similar to wedding cookies it's their mouse-like shape that give them their strange name. Call them whatever you may, these sweet nut cookies are quite tasty! This recipe makes about 18 cookies. I doubled the recipe and made 3 dozen. I was able to fit 18 on each tray just perfectly. Two cookies broke in half when I was flopping them around in the confectioners' sugar. I don't believe they are too delicate, but I guess just a bit. Not to worry. I took care of them. ;o)


1/2 c. butter (1 stick)

1/2 c. chopped pecans

1 T. sugar

1 1/2 tsp. vanilla

1 c. all-purpose flour

Sifted powdered (confectioner's) sugar, or unsifted (about 1-2 c.)


Cream butter and tablespoon of sugar. Add flour, pecans and vanilla. Work dough with hands. Roll into small bars about the size of your thumb. Bake at 425 degrees for about 10-12 minutes. When done roll immediately in powdered sugar. Use a spatula to move from pan to sugar.
