Macadamia Nut Cookies

Yield: 3 Dozen Cookies


1 c. unsalted butter

1/2 c. castor sugar (or substitute confectioners' sugar)

1 c. light brown sugar

2 large eggs

2 3/4 c. self-rising flour

1/2 - 1 c. chopped macadamia nuts

1/2 - 1 c. chopped white chocolate


Cream together butter, castor sugar and brown sugar. Add eggs, followed by flour. Fold in macadamia nuts and chopped white chocolate. Chill dough for 30 minutes. Form cookie dough into balls using a cookie or ice cream scoop and place on ungreased baking sheet. If making large cookies, flatten slightly with a wet fork (use water to wet fork). Bake cookies for 12 to 15 minutes at 350 degrees. Remove from oven and cool on baking sheet or wire rack.
