Grandma's Date Pinwheel Cookies

Yield: 3 Dozen Cookies


2 1/4 c. chopped dates

1 c. white sugar

1 c. water

1 c. ground nuts

1 c. shortening

2 c. brown sugar

3 eggs, well beaten

4 c. flour

1/2 tsp. salt

1/2 tsp. soda


Combine dates, white sugar and water. Cook over low heat until thick; about 10 minutes. Add nuts and cool. 

Meanwhile, cream shortening. Add brown sugar gradually; add well-beaten eggs. Add flour, salt, and soda. 

Refrigerate for 1 hour. Divide into 2 or 3 parts. Roll out separately into rectangles a scant 1/4-inch thick. 

Spread each rectangle with date nut mixture. Roll up as for jelly roll. Wrap each roll in waxed paper and chill overnight. 

Slice and bake at 400 degrees for 10 to 12 minutes.
