Vegan Peach, Strawberry, Granola Pancakes


1 cup flour

2 teaspoons baking powder

2 scoops protein powder

1 tablespoon turbinado sugar

pinch salt

1/4 cup granola

1 peach--diced

4-6 strawberries--diced

2 tablespoon coconut flour

2 bananas--mashed

1 1/4 cup almond milk

1 teaspoon vanilla extract

1 teaspoon melted Earth Balance (or margarine, etc.)

Cooking spray


*Toss peaches and strawberries in coconut flour; set aside. Mix flour, sugar, baking powder, protein powder, and salt in large bowl. In a separate bowl, mix smashed banana, vanilla extract, almond milk, and melted Earth Balance.

*Add banana mixture to dry ingredients. Stir. Fold in fruit and granola. Set aside. In the meantime, heat griddle or frying pan over medium heat. Spray with cooking spray. Scoop batter into preheated pan. When bubbles form on the top of the pancakes and the edges turn golden brown, flip. Cook on the second side 1-3 minutes or until the second side is golden brown. Serve with fruit, maple syrup, or whipped coconut cream.
