Tomato and Warm Shallot Salad

Ingredients:

1 dry pint grape tomatoes--cut in half

1 large shallot--diced finely

2 1/2 tablespoons olive oil, divide

1 tablespoon white balsamic vinegar

1/2 teaspoon dijon mustard

pinch salt

pinch black pepper

Method:

*Prep tomatoes and plate. Saute shallot in 1 tablespoon of olive oil until soft. Whisk oil, vinegar, salt, pepper, shallot mixture, and mustard. Pour warm shallot vinaigrette over tomatoes. Serve.
