Vegan Lime Toasted Coconut “Gelato”

Ingredients:

1 block silken tofu

1 14 oz. can full fat coconut milk

1 teaspoon vanilla extract

pinch salt

zest and juice from 1 lime

¾ cup vegan sugar

¼ cup shredded coconut

1 cup shredded coconut—toasted

Method:

*Blend all ingredients, except the toasted coconut, in a blender until completely smooth. Add mixture to an ice cream maker and run according to manufacturer’s instructions. After 20 minutes, add the toasted coconut and run the ice cream maker for approximately 2-5 additional minutes. Remove mixture from ice cream maker and transfer to a freezer safe container. Freeze until frozen. Enjoy!!!
