Lemon Herbed Cherry Berry Pops Ingredients: 4 1/2 cups lemon lime flat soda, divided 1 pint blueberries 1 tablespoon thyme simple syrup 1 1/2 cups fresh, pitted cherries 1/4 cup basil simple syrup juice and zest from 1 lemon 1/4 cup lemon juice 1/4 cup + 2 tablespoons sugar, divided 2 tablespoons fresh chopped mint Method: *Blend cherries, 1/2 cup flat soda, and basil simple syrup until smooth. Strain. Divide the cherry mixture between 30 ice pop molds (fill to about 1/2 inch high). (Save the pulp for a smoothie or homemade ice cream sauce!). Freeze until frozen solid. *Mix 2 1/2 cups flat soda, along with juice, pulp and zest from one lemon. Add lemon juice, 1/4 cup of sugar, and chopped mint. Mix until sugar is completely dissolved. Once cherry layer is frozen, divide lemon mixture between molds and freeze for ~1 hour or until lemon layer is slushy. Add sticks to molds. Freeze until completely solid. *Blend blueberries, 1 1/2 cups flat soda, 2 tablespoons sugar, and thyme simple syrup. Strain twice. Divide the blueberry mixture between molds.
