Chocolate Cherry Almond Tart

Crust Ingredients:

2 ½ cups Oreos—crushed into crumbs

¼ cup Earth Balance (or butter or margarine)—melted

Crust Method:

*Preheat oven to 325 degrees F. Stir melted Earth Balance and cookie crumbs until fully mixed. Press into tart pan (onto the bottom and up the sides). Bake 10 minutes. Let cool completely.

Mousse Ingredients:

1 package silken tofu

¼ cup almond milk

1 teaspoon almond extract

½ cup melted chocolate chips

1 tablespoon dark cocoa powder

¼ cup sugar

Mousse Method:

*Blend all ingredients on high until smooth (you may need to scrap down and re-blend to ensure that all ingredients are fully mixed). Refrigerate at least one hour.

Assembly!:

¼ cup flaked almonds

pitted cherries (about 1-2 pounds)

melted chocolate

whipped coconut cream

Assembly Method:

*Spread chilled mousse onto cooled tart shell. Sprinkle with almonds. Top with cherries. Drizzle with chocolate. Serve with whipped coconut cream. Enjoy!!!
