Mini Chocolate Tiramisu Cakes
Preheat oven to 350 degrees F. Spray mini-cupcake pan with non-stick spray. In a medium bowl, mix cake mix, sour cream, egg, water and espresso powder. Beat on low speed until incorporated. (mixture will be thick), about 2 minutes. Fill with approximately 1 rounded teaspoon of batter into mini-muffin cups. Bake for 8-10 mins. While cakes are still warm, brush with coffee liquor until all liquor is finished. Let cool completely.
Mix mascarpone cheese with sugar and vanilla. Fill piping bag and pipe cream cheese frosting onto each cupcake. Dollop with whipped cream and dust with cocoa.
