Shrimp and Leek Pizza

Made this for Dan and the lovely Marla tonight. It is better with the citrus cipolline but this is easier.

12 large shrimp, deveined, deshelled and
sliced in half horizontally
1 cup arugula
salt
pepper
2 cups sliced leeks
pizza dough\olive oil

1. Preheat oven to 550 with pizza stone
2. Sautee leeks in olive oil until soft, reserve together
3. salt and pepper shrimp
4. Mix arugula with olive oil and salt
5. Roll out dough, place on pizza stone and cover with leeks and their cooking oil
6. Cook 5 minutes until dough is semi-crisp
7. Add shrimp to pizza
8. Cook exactly 2.5 minutes - you want the shrimp cooked just a point
9. Remove pizza and add arugula
10. Serve

Pizza with pancetta and arugula

This is my favorite pizza. The rich saltiness of the pancetta and the sweetness of the sauce are cut by the bitterness of the arugula.  Tom Courtney liked it so much he ate a small bit that he had dropped on the floor.  Now that makes you feel good as a chef.

Pizza dough
Tomato sauce (cherry tomatoes or canned tomatoes sauteed in olive oil with onions)
pancetta (good soppressata is good as well)
arugula
good quality olive oil
sliced mozzarella

1. roll out pizza dough
2. add sauce
3. add mozzarella
4. cook 8 minutes at 500 on pre-heated pizza stone
5. add pancetta - cook until done
6. mix arugula with olive oil and a dash of salt
7. place arugula on pizza and serve.

 

Yellow Chive King Oyster Mushroom Pizza

Not sure if I loved this dish - it was very interesting.

1 package yellow chives
2 king oyster mushrooms
pizza dough
2/3 mozzarella
butter
truffle oil
olive oil

wilt yellow chives
sautee oyster mushrooms in olive oil and then finish in oven at 300.
Slice diagonally.

Roll pizza
spread chives
Add cheese
Cook 5 minutes
Add mushrooms
Cook 3 minutes until done
drizzle with truffle oil.
serve.

Shrimp, Arugula and Citrus Cipoline Pizza


12 large shrimp, deveined and cut in half lengthwise,

Juice of 1 blood orange
juice of 2 sour tangerines
juice o2 2 sweet lemons
water
1 tbsp sugar
1/2 tsp sugar
2 springs thyme
20 cipoline onions, with x cut in stem, unpeeled

2 cups arugula, washed
pizza dough
2 tbsp olive oil

1. Place onions in small saucepan with citrus juices, thyme, salt and sugar, cover with water and cook for 1 hour over low heat.
2. Preheat oven to highest setting (I used 550) and place pizza stone in middle rack
3. Peel onions and cut into 1/3 inch strips
4. Reduce onion cooking liquid until it is syrupy (about 1/4 cup)
5. Mix shrimp with 1 tbsp of the syrup, sat and pepper
6. Roll out pizza and rub with 2 tbsp olive oil and place onions on top
7. Cook 6 minutes
8. Place shrimp on top
9. Cook 2 minutes 45 seconds until shrimp are just cooked
10. Remove pizza from oven, place arugula on top and serve.

Smoked Mozzarella and Onion Pizza

1 large sweet onion, sliced thin
olive oil
pizza dough
8 oz smoked mozzarella, sliced thin
salt

1. Make Pizza Dough, roll out
2. Pheheat oven to highest setting and place pizza stone in middle rack
3. Heat olive oil in large sautee paan
4. Salt and onions until light brown over low heat
5. Spread onions over pizza
6. Spread mozzarella over onions
7. Cook 12 minutes until pizza is light brown on bottom

 

Salmon, Leek and Goat Cheese Pizza

I made this first on top of Mike and Melissa's grill during a summer bbq during a blackout.  Trader Joe's was out of Creme Fraiche.

 

2 leeks - white and light green parts, sliced thin (be sure to clean carefully)

olive oil

1 log unflavored goat cheese

salt and pepper

 pizza dough

2/3 cup hot smoked salmon, sliced thin 

 


1. preheat over to 550 degrees, place pizza stone in middle rack

2. sautee leeks in olive oil until wilted, add salt and pepper

3. roll out dough and place on stone - add leeks and oil form leeks

4. Cook 7 minutes until done

5. Remove and dab on goat cheese.  Add salmon.

6. Serve

Hot Smoked Salmon and Creme Fraiche Pizza

Clearly a ripoff of Wolfgang Puck's classic.  But this uses hot smoked salmon and no caviar.

 

1 sweet onion

olive oil

creme fraiche

salt and pepper

 pizza dough

2/3 cup hot smoked salmon, sliced thin 

 


1. preheat over to 550 degrees, place pizza stone in middle rack

2. sautee onions in olive oil until wilted, add salt and pepper

3. roll out dough and place on stone - add onions and oil from onions

4. Cook 7 minutes until done

5. Remove and dab on creme fraiche.  Add salmon.

6. Serve

 

Zucchini Flower Pizza with Caramelized Sweet Onions and Cherry Tomato Oil

 

 

 

1 sweet onion

olive oil

butter 

1/2 pound mozzarella, sliced thin

pinch of sugar

16 zucchini flowers

1 bag cherry tomatoes, sliced in half

salt and pepper

 pizza dough

2/3 cup hot smoked salmon, sliced thin 

 


1. bake cherry tomatoes oven at 450 25 minutes with salt and 1/4 cup olive oil.  Reserve tomoatoes for a later use and keep flavored oil

2. preheat over to 550 degrees, place pizza stone in middle rack

3. sautee onions in olive oil until wilted, add salt and pepper

4. sautee zucchini flowers in butter and olive oil, adding a pinch of sugar, salt and pepper

5. roll out dough and place on stone - add onions and mozarela

6. cook 7 minutes until done

7. Remove and add zucchini flowers, drizzle 1.5 tbsp flavored olive oil

8. Serve

 

 

Bacon, Piquillo and Pecorino Romano Pizza


3 slices thick cut bacon, sliced in1/3 inch strips

2 tbsp olive oil

1/2 sweet onion

2 roasted garlic cloves, minced

2/3 can San Marzano Tomatoes

2 cups sliced pecorino romano (on mandoline)

2 piquillo peppers, sliced in 1/3 inch strips


salt and pepper

 pizza dough

 


1. preheat over to 550 degrees, place pizza stone in middle rack

2. sautee bacon in olive oil until wilted, remove

3. sautee onions in olive oil

4. add tomatoes, garlic, salt and pepper cook 10 minutes

5. roll out dough and place on stone - add sauce and cheese

6. Cook 4-6 minutes on broil until bottom is brown

7. add bacon, peppers, cook 2 minutes

8. Serve
