Braised Lamb Shoulder

 8 lamb shoulder chops

olive oil

salt and pepper

1/2 can San Marzino tomatoes

1.5 cups red wine

2 sprigs thyme

1 onion, sliced

 

1. preheat oven to 400

2. salt and pepper chops

3. brown on both sides, remove from pan

4. sautee onions until brown

5. deglaze with wine

6. add tomatoes and thyme, mix

7. add lamb chops, submerge as best possible

8. cover and  cook for 2 hours until fork tender

9. serve with polenta
