Warm Mozzarella with pancetta, Basil, Tomato Sauce

Warm Mozzarella with pancetta, Basil, Tomato Sauce

4 oz mozzarella, sliced thin
1 cup chopped San M Tomatoes
6 basil leaves, julienned
2 tbsp sliced onions
1 tbsp julienned pancetta
olive oil
salt and pepper

1. Heat olice oil
2. add pancetta and cook 1 minute until fat is translucent
3. Add onions and cook 5 minutes, until softened
4. Add tomatoes, salt and pepper, cook 5 minutes
5. Place mozzarella on nonstick pan, salt and pepper, heat until soft
6. Add basil to tomato sauce, stir 20 seconds
7. Remove mozzarella to serving dish (leave liquid behind)
8.Cover with dollops of tomato sauce.
9. serve

Raw Garbanzos with Burrata MJ Power

60 raw garbanzos
8 oz chopped burrata
2 tbsp fruity tuscan olive oil
fleur de sel
