Filing

1/3 cup cornstarch

3 egg yolks

1 1/2 cups whole milk

1/2 cup of coconut milk

2 tablespoons unsalted butter

1 cup sweetened coconut flakes

Topping

1 pint heavy whipping cream

1/2 cup powdered sugar

1 teaspoon extract vanilla

Garnish

1/2 cup of toasted sweetened coconut flakes

Single Pie Crust

1 1/2 cup of all purpose flour (pillsbury best)

1/2 teaspoon kosher salt

1/2 cup of crisco vegetable shortening

3 to 6 tablespoons of ice water

Pre bake crust 425 degrees for 15 minutes

Deep Dish Double Crust

2 2/3 cups of all purpose flour (pillsbury best)

1 teaspoon of kosher salt

1 cup of chilled crisco vegetable shortening

10 tablespoons of ice water
