Roasted Parsnip, Carrot, Potato and Onion Gratin

Ingredients


4 lbs root veggies, sliced thinly with a mandolin - I used a variety of potatoes, parsnips and carrots

2 large onions, sliced thinly with a mandolin

1/4 cup olive oil

1 tsp sea salt


Directions


1. Preheat oven to 375F. Slice all veggies thinly with a mandolin. Mix with sea salt, and olive oil in a large bowl. Pour into 9/13inch baking dish. Bake 1 hour then set broiler to high for 4 to 5 minutes.
