Indian Spiced Beet and Carrot "Fries"

Vegan, Gluten Free, Dairy Free
2 large golden beets, peeled and sliced into a fry shape
1 cup carrots, sliced into a similar shape
1 tsp garam masala (Indian spice blend)
1 1/2 Tbsp melted coconut oil
1/4 tsp salt
1 Tbsp agave (or honey for non-vegan option)
Pinch of Cayenne pepper
Fresh cilantro to garnish, optional
1. Preheat oven to 400F.
2. Mix garam masala, coconut oil, salt, honey and cayenne. Pour over sliced beets and carrots. Bake 60 minutes; stirring every 20 minutes. Top with chopped fresh cilantro if desired.
