Dilled Tomato, Cucumber and Black Eyed Pea Salad

2 seedless cucumbers, chopped

1 pint grape or cherry tomatoes, halved

1/4 cup chopped sweet onion

1 14.5 oz can black eyed peas, drained and rinsed

3 Tbsp chopped fresh dill

1/2 tsp lemon zest

Juice of 1 lemon

3 Tbsp extra virgin olive oil

Sea salt and fresh ground pepper, to taste


1. Add all ingredients to a large bowl.  Mix well.
