White Bean and Roasted Red Pepper Dip from Closet Cooking
(makes 2 snack sized servings)

1/2 19 ounce can white beans
1 roasted red pepper
2 cloves of garlic
1/2 lemon (zest and juice)
1 tablespoon olive oil
salt and pepper to taste

1. Puree everything in a food processor until smooth adding water (or more olive oil) to bring it to the consistency that you desire.
