Strawberry Souffle from Closet Cooking
(makes 4 servings)
1 cup pureed strawberries
2 tablespoons sugar (optional)
1/4 teaspoon vanilla extract
3 egg whites (room temperature)
1. Mix the strawberry puree, sugar and vanilla extract.
2. Beat the egg whites until you get soft peaks.
3. Gently fold the strawberry puree into the egg whites.
4. Pour the mixture into 4 greased ramekins.
5. Bake in a preheated 350F oven until puffed and golden brown on top, about 12 minutes.
