Roasted Red Pepper Hummus

A creamy chickpea hummus with sweet roasted red peppers that is great as a dip or spread!Servings: 4Prep Time: 10 minutesCook Time: 0 minutesTotal Time: 10 minutes
- 1 (15 ounce) can chickpeas
- 2 roasted red peppers
- 1/4 cup tahini
- 1 clove garlic
- 1/4 cup lemon juice (~1 lemon)
- 2 tablespoons olive oil
- salt, pepper and cayenne to taste
Option: Add a dash of smoked paprika for a hint of exotic.
- Puree the chickpeas, tahini, lemon juice and oil in a food processor adding water or oil if necessary to bring it to the consistency that you like and salt, pepper and cayenne to taste.
