Rhubarb Compote from Closet Cooking
(makes 4 servings)

Ingredients:
2 pounds rhubarb (trimmed and cut into 1/2 inch pieces)
1 orange (juice and zest)
1/2 cup sugar

Directions:
1. Simmer everything until the rhubarb is nice and soft. Serve while still warm or after chilling.
