Curried Chicken Salad Sandwich with Apple Chutney from Closet Cooking
(makes 1 sandwich)
1 cup cooked chicken (or turkey)
1 stalk celery (sliced)
1 green onion (sliced)
2 tablespoons mayonnaise
1 teaspoon curry powder
2 tablespoons apple chutney
1 tablespoon dried cranberries
1 tablespoon pecans (toasted and chopped)
salt and pepper to taste
2 slices of bread (optionally toasted)
1. Mix everything but the bread in a bowl.
2. Assemble sandwich.
