Chicken Noodle Soup from Closet Cooking

A super easy homemade chicken noodle soup that is the definition of comfort food!

  • 1 tablespoon oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth or chicken stock
  • 2 cups cooked chicken, cut into small pieces
  • 2 cups egg noodles
  • 1 teaspoon poultry seasoning
  • 1 tablespoon white miso (optional)
  • 1/4 cup parmigiano regginao (parmesan), grated (optional)
  • 1/2 lemon, juice (optional)
  • salt and pepper to taste
  • 1 handful parsley, chopped
  1. Heat the oil in a large stock pot over medium heat, add the onions, carrot and celery and cook until tender, about 10-15 minutes.
  2. Add the liquid, chicken and poultry seasoning, bring to a boil, reduce the heat and simmer for 15-20 minutes.
  3. Add the noodles and simmer until just tender, about 5 minutes.
  4. Optionally mix in the miso, parmesan and lemon juice.
  5. Season with salt and pepper to taste and mix in the parsley
