Chicken and Roasted Red Pepper Panini with Cilantro Pesto and Feta from Closet Cooking
(makes 1 sandwich)

1 chicken breast (pounded thin)
1/2 teaspoon smoked paprika
salt and pepper to taste
1/2 tablespoon olive oil
2 slices of bread (or 1 bun)
1/2 roasted red pepper
1 handful baby spinach
2 tablespoons cilantro pesto
1 handful feta (mashed)
1/2 tablespoon olive oil

1. Dust the chicken with the paprika and season it with salt and pepper.
2. Heat the oil in a pan.
3. Add the chicken and cook until it is golden brown on both sides and cooked all the way through, about 4-7 minutes per side.
4. Assemble sandwich, brush both sides with olive oil and grill until golden brown on both sides.
