Brussels Sprouts with Bacon and Lemon by Closet Cooking
(makes 4 side dish sized servings)

Ingredients:
1 tablespoon oil
1 shallot (chopped)
1 pound brussels sprouts (cleaned, shredded, blanched and drained)
4 slices bacon (cooked and crumbled)
1 teaspoon lemon zest
salt and pepper to taste

Directions:
1. Heat the oil in a pan.
2. Add the shallot and saute until tender, about 3-5 minutes.
3. Add the brussels sprouts, bacon, lemon zest, salt and pepper and toss to mix.
