BLAST (Bacon, Lettuce, Avocado, Shrimp and Tomato) Sandwich from Closet Cooking
(makes 1 sandwich)

4 slices bacon
4 shrimp (peeled and deveined)
salt and pepper to taste
2 slices bread
1/2 avocado (stoned, scooped and mashed)
1 tablespoon mayonnaise
2 leaves lettuce
2 slices tomato

1. Cook the bacon in a pan and set aside.
2. Season the shrimp with salt and pepper to taste.
3. Add the shrimp to the pan and saute in the bacon grease until cooked, about 2-3 minutes per side.
4. Mix the avocado and mayo.
5. Assemble sandwich.
