Asparagus Amandine from Closet Cooking

Asparagus served in a quick and easy browned butter, lemon and almond sauce.

  • 1 tablespoon butter
  • 1 pound asparagus trimmed
  • salt and pepper to taste
  • 1 tablespoon butter
  • 2 tablespoons lemon juice (~1/2 lemon)
  • 1/4 cup almond slices or slivers, toasted
  • 1 tablespoon parsley
  • salt and pepper to taste
  1. Heat the butter in a pan over medium heat until it is bubbling, add the asparagus, cook until cooked, about 2-3 minutes and set aside.
  2. Add the butter to the pan and cook until it browns, about 2-3 minutes.
  3. Add the almonds and cook until lightly toasted, about 2-3 minutes.
  4. Add the lemon juice and parsley, season with salt and pepper and remove from heat.
  5. Serve the asparagus covered in the sauce.
